Greek Yellow Long-grained rice of fine quality that always remains grainy. It is cultivated in the deltas of the rivers Aliakmonas and Axios. It is parboiled and takes on its yellowish color from its outer bark during processing. Parboiled is the method of hydrothermal treatment in which the rice grain is dipped in hot water and steam with the result that all its nutrients are diffused inside the grain, while at the same time the rice becomes even more delicious and grainy.
