Angiosperm, dicotyledonous, small, herbaceous plant. It belongs to the family of legumes and to the order of faucets. Its fruit is small, reaching a maximum of 3 cm, it is wide and has 2-3 small seeds with a diameter of 3-10 mm, our well-known lentils. Depending on the size of the fruit, they are divided into large seeds, with spores with a diameter of 10 mm and small seeds with 6 mm spores. India has the largest production in the world, while Canada, the USA and Turkey also have large production. Lentils are grown almost all over Greece. It is a plant that adapts easily to climatic conditions and multiplies by sowing. It withstands drought, but also high and very low temperatures. Two are the most important Greek varieties: Pelasgia and Arachova. Lentils are rich in iron, phosphorus, carbohydrates, proteins and B vitamins. we prefer boiled as a soup. But they are great as a salad, combined with raw vegetables but also as an accompaniment to meat.
